The secrets of the Marsanne and Clairette grape varieties
The grape varieties of each farm must contain at least 60% Marsanne and Clairette, which are the two main grape varieties of the appellation. The Marsanne, originating from the north of the Rhône valley, has perfectly acclimatized to the maritime border. It brings fine and elegant aromas punctuated with notes of white flowers as well as a beautiful length in the mouth. Over time, it offers subtle honeyed notes. La Clairette, of Provençal origin, appreciates the chalky, infertile, thin and dry soils of the Cassidian vineyard. It contributes to the freshness of Cassis whites. It offers them scents of aniseed, garrigue, acacia honey and white-fleshed fruits. It also confers roundness and fatness.
